Thai Grilled Chicken Burger
Ingredients
- 1 lb. ground chicken thigh meat
- 1/2 cup Pork Panko
- 1/4 cup coconut cream
- 1/2 cup cilantro, chopped
- 2 clove garlic, minced
- 1/2 tsp. ground ginger
- 2 tsp. salt
- 1 tsp. black pepper
- 1 tsp. ground cumin
- 2 tsp. fresh lime juice
- 2 tsp. freshly grated lime zest
- 1 tbsp. vegetable oil
- 4 hamburger buns
- 6 oz green papaya, shredded
- 1/2 red onion, thinly sliced
- 3 tbsp. fresh lime juice
- 1 tbsp. fish sauce
- 1 tbsp. brown sugar
- 1/2 cup mayonnaise
- 1 1/2 tsp. curry powder

Directions
Step 1
Combine papaya, onion, 3 tablespoons of lime juice, fish sauce and brown sugar in a bowl. Cover and refrigerate until ready to use.
Step 2
Mix together ground chicken, Pork Panko, coconut cream, cilantro, garlic, ginger, seasonings, lime zest and 2 teaspoons lime juice until thoroughly combined. Refrigerate for 20 minutes.
Step 3
Form the chicken mixture into four equal patties. Brush each burger with vegetable oil on both sides.
Step 4
Preheat cast iron pan on the grill to 450F.
Step 5
Cook for 4 to 5 minutes per side, or until the burgers reach 165℉ internally.
Step 6
Assemble burgers on each bun, pile high with papaya slaw, lather with curry mayo, and enjoy!
