Pork Panko'd Cream Cheese & Coconut Flour Waffles
We love weekend brunch, and these waffles are a great way to have a decadent treat without the carbs. Pork Panko in the batter adds a great texture, and sprinkled on top gives a great crunch!

Ingredients
- 4 Eggs
- 6tbsp + 2 tbsp Pork Panko (1 x 3oz package contains 1.5 cups)
- 4 tbsp coconut flour
- 4oz of softened cream cheese
- 2 tsp Swerve or other baking sugar replacement
- 2 tsp Vanilla extract
- 1 1/2 tsp Baking powder
- Cinnamon/Pumpkin Pie spice to taste (optional)
Yield: ~4 waffles

Directions
Step 1
Mix all the ingredients (flour, Pork Panko, spices, eggs, cream cheese) together in a food processor or by hand.
Step 2
Scrape down the sides with a spatula and mix until you have a smooth batter consistency.
Step 3
Preheat your griddle and use the cooking oil spray of your choice. Add the batter and reserved pork panko on top, cooking til golden brown on both sides.
