Pork Panko'd Cream Cheese & Coconut Flour Waffles

We love weekend brunch, and these waffles are a great way to have a decadent treat without the carbs. Pork Panko in the batter adds a great texture, and sprinkled on top gives a great crunch!

  • 4 Eggs
  • 6tbsp + 2 tbsp Pork Panko (1 x 3oz package contains 1.5 cups)
  • 4 tbsp coconut flour
  • 4oz of softened cream cheese
  • 2 tsp Swerve or other baking sugar replacement
  • 2 tsp Vanilla extract
  • 1 1/2 tsp Baking powder
  • Cinnamon/Pumpkin Pie spice to taste (optional)

Yield: ~4 waffles

Step 1

Mix all the ingredients (flour, Pork Panko, spices, eggs, cream cheese) together in a food processor or by hand.

Step 2

Scrape down the sides with a spatula and mix until you have a smooth batter consistency.

Step 3

Preheat your griddle and use the cooking oil spray of your choice. Add the batter and reserved pork panko on top, cooking til golden brown on both sides.

Step 4

Top with butter and the syrup of your choice. Enjoy!
