Bourbon-Candied Yams

Gorditas
- 40oz of Canned Yams (Drained and 1/2cup reserved)
- 1 cup of Pork Panko (more or less depending on size of bakeware)
- 1/2 cup of light brown sugar
- 1/3cup of unsalted butter cut into pads
- Mini Marshmallows
- 2tbsp of Bourbon

Directions
Step 1
Preheat oven or grill to 350 degrees.
Step 2
Drain Yams and reserve 1/2cup of the liquid.
Step 3
Simmer 1/2cup of reserved liquid and add in 2tbsp of bourbon, reduce in half and cool.
Step 4
Mash up yams, add bourbon liquid.
Step 5
Place into bakeware or skillet, sprinkle with brown sugar and add butter cut into pads evenly.
Step 6
Bake for 15 minutes, mix around and evenly coat top in Pork Panko.
Step 7
Bake for 10 minutes or until Panko gets crispy.
Step 8
Add marshmallows in a single layer and continue baking until marshmallows brown (about 5-10 minutes).
