Pork Rind Pimiento Cheese Bites

Pork rinds and pimiento cheese have long been southern classics, and together they make an easy delicious appetizer or snack. Bring these to your next dinner party, brunch gathering, or whip it up for a chill night in. These rosemary & sea salt pork clouds add a crispy, fresh, herby counterpoint to the creamy pimiento cheese-- Give this recipe a try!

Makes 1 1/2 cups of pimiento cheese. Time: 5-10 minutes

Ingredients and Amounts:

  • 8 oz. Grated sharp cheddar 
  • 3 oz. pimiento peppers, diced and drained
  • 2 oz. softened cream cheese
  • 2 Tbsp mayonnaise (optional: substitute greek yogurt)
  • Green onion garnish (optional)
  • Salt and pepper to taste
  • Pork clouds of your choice

Step 1

In a large mixing bowl, mix together cheddar, pimientos, cream cheese, and mayonnaise. Make sure to break up any chunks of cream cheese.
