Penny’s Cranberry Apple Caulirice Stuffing
- 2 12oz bags of frozen cauliflower rice
- 3 ribs celery, diced
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tbsp ghee
- 1 ½ - 2 cups chicken broth
- 1 cup nut crumbs (original flavor)
- 1 cup Pork Panko
- 1 cup dried cranberries
- 1 large apple, cored and diced
- 1 tsp dried sage
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper

Melt ghee in large skillet.
Add celery and inoin, cook until onions are translucent.
Add salt and pepper and garlic, stir 1 min.
Add cauliflower rice, stir to combine.
Add broth and apple, simmer on medium for 5 mins.
Add nut crumbs, Pork Panko, sage and thyme.
Stir well, adding more broth if needed.
