Pork Rind Breaded Coconut Shrimp

The classic coconut shrimp need not be an unhealthy recipe. Just trim out the empty calories by adding pork rind breading and coconut shreds.

Ingredients and Amounts:

  • 12 medium shrimps, cleaned
  • Salt & pepper
  • 1 egg
  • Chili powder
  • 1 cup Pork Panko
  • 2 cups shredded coconut
  • Avocado oil for frying

Recipe:

Step 1

Beat eggs in a shallow bowl. Mix Pork Panko, shredded coconut, salt, pepper, and chili powder in a second bowl.

Step 2

Dip shrimp in egg batter then in coconut mix.

Step 3

Heat 1/4 inch of oil in a frying pan. Fry shrimps for 2 to 3 minutes on each side.

Step 4

Optional: Serve with your favorite seafood dipping sauce and garnish with chopped cilantro.
