It's Summer and the Southern dishes are coming out in full force! We got this delicious recipe for fried green tomatoes from our friend Sarah over at Primal Bites. It's fun, quick, and perfect for a hot, lazy weekend snack.
Here's what you'll need!
- ¼ cup ghee (We love OMghee!)
- 2-3 green tomatoes
- ¾ cup milk (we used regular milk, but feel free to sub almond milk!)
- ¾ cup flour (We used King Arthur's gluten free blend
- 2 eggs, whisked
- 2 cups Pork Panko
- Mayonnaise to top (we mixed with chipotle for a quick, simple chipotle mayo)
Place milk, flour, Pork Panko, and eggs each in separate dishes, then cut the tomatoes into medium thick slices (1/4 to 1/2") . You're going to take each sweet little tomato slice on a flavorful journey to become the Fried Green Delicacies of your dreams. First, dip them in milk, then flour, then coat in egg, and finally top off with Pork Panko. When your little buddies are ready to go, heat 2½ TBSP ghee in a skillet over medium heat. Once the ghee has melted, fry the tomatoes in a single layer for 3-4 minutes per side. Voila! A low-carb delicacy that would make even the most Southern granny proud.
