Light and Easy Arugula Summer Salad

Crispy Salad with Pork Dust

This delicious salad features my very favorite of all the lettuces- arugula. Somehow I missed out on arugula until my late twenties. IMAGINE. I know it can be divisive with it's distinct peppery flavor, but in this recipe, I think you'll appreciate arugula as much as I do.

Pork Dust Salad

Ingredients and Amounts:

For the salad:

  • 1 package of Arugula (I found a spinach/arugula mix that worked beautifully)
  • 1 bunch of green onions
  • 1/2 cup sliced almonds
  • 1/2 cup Pork Panko (In lieu of breadcrumbs. Carbs- you have no place here.)
  • 1/4 cup crumbled cheese (I used queso fresco because i love it and that's what I had on hand. Feta or goat cheese would also make an excellent addition.)

For the dressing:

  • 1 tablespoon lemon juice
  • 1 tablespoon champagne vinegar
  • 3 tablespoons olive oil
  • sea salt
  • black pepper

Salad Ingredients

One thing that makes this salad so amazing is how completely simple it is to make, yet how delicious and complex it tastes! In one bowl, combine arugula, almonds, cheese, and Pork Panko. In a jar, combine lemon juice, vinegar, olive oil, and salt and pepper to taste. Shake to combine. Pour desired amount slowly over salad until leaves are coated. Enjoy! Feel free to share with friends and family (but make sure to leave out the part about how easy it was).
