Crispy Protein-Packed Green Bean Casserole

It's Thanksgiving Eve and we're prepped and ready to consume mass quantities of turkey! Even though turkey may be the main event tomorrow, don't forget those delicious sides. Whether you're looking for a last minute idea or you're thinking ahead to Christmas dinner, we'd like to share this delicious recipe for protein-packed Green Bean Casserole (Adapted from the Healthy Recipes Blog). The recipe cuts out a good deal of carbs by substituting crushed pork rinds for the traditional bread or fried onion topping. The combination of Pork Panko and Greek yogurt make this a delicious high-protein holiday treat!

To start, you'll need the following ingredients:

Topping:

  • 1 small bag Pork Panko
  • 1 TBSP unsalted butter, melted

Dish:

  • 1 cup Greek Yogurt
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 TBSP olive oil
  • 1 or 2 chopped leeks (can also use onion)
  • 1 lb fresh green beans
  • 1 TBSP minced garlic
  • 1/2 cup shredded cheddar

Directions
Step 1

Combine melted butter with 1 cup of the Pork Panko and set aside.

Step 2

Preheat oven to 350. Mix ½ teaspoon kosher salt, 1/2 tsp garlic powder 1/4 tsp cayenne pepper into 1 cup of greek yogurt.

Step 3

Heat oil in a large skillet over med-high heat. Add leeks (or onions) and saute until lightly browned.

Step 4

Add green beans and cook for a few more minutes. Finally, add the garlic and cook for another minute before removing the mixture from heat.

Step 5

Stir in cheddar until melted. Add the yogurt and mix well. Transfer to a 2 QT baking dish and sprinkle liberally with Pork Panko topping. Bake for 30 minutes to crispy perfection.
